With a passion for fresh food and a flair for creating mouthwatering dishes, Head Chef at Jack’s Restaurant & Bar, Jamie Hirst, has earned a reputation as an exceptional chef everywhere he has worked.

From the Michelin starred Olive Branch in Clipsham to his most recent post at The Residence in Bath, Jamie, 29, has developed an impressive CV and delivered mouthwatering results throughout his young career.

Jamie grew up in Grimsby, where he began his training as a chef working in various hotels and restaurants. Since he left school at the age of 16, he has worked in some of the UK’s most renowned eating establishments, helping some of them to achieve awards including Michelin stars and rosettes.

Having worked as Senior Chef de Partie at Moonfleet Manor in Weymouth, Jamie then went on to work as Pastry Chef at Stapleford Park in Melton Mowbray. In 2008 he helped the The Olive Branch in Oakham to achieve Michelin Pub of the Year Award before taking up the role as Head Chef at The Residence in Bath.

With a sound understanding of the restaurant trade having worked his way up through the ranks, Jamie places the emphasis on fresh, quality ingredients, and keeps food simple, letting the flavours speak for themselves.

Whereas most restaurants use brand-name products such as tomato sauces, vinegars, jams and pickles, Jamie has brought with him a passion for making items from scratch wherever possible.  Home-made jams ,chutneys, ketchup and other condiments are made onsite by the kitchen team. He even has plans to make his  own vinegar and Parma ham to give you something truly unique when you visit.

Working in one of Wiltshire’s favourite independent restaurants, Jamie aims to complement the superb location and welcoming atmosphere with simple dishes made with excellent ingredients. He believes that wholesome, modern, European and British cuisine combined with the unique atmosphere of Jack’s Restaurant & Bar is a winning combination.
